Tilapia in Thai Sauce

Tilapia in Thai sauce makes an easy and delicious supper that goes really well with jasmine rice. Tilapia itself is a versatile and delicately flavored fish that is tastes even better with this truly Thai-flavored sauce.

Ingredients

  • 4 tilapia fillets
  • 2 tablespoons corn flour
  • 2 tablespoons sunflower oil
  • 4 spring onions (sliced)
  • 1 ginger (finely chopped)
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 lime (1 chopped, 1 juiced)
  • 1 red chili (deseeded and sliced)
  • Thai basil/coriander

Method

Step 1

Coat the fish fillets in the corn flour and set aside while heating the oil in a large pan.

Step 2

Fry the fillets for 2-3 minutes on each side, then take out and keep warm.

Step 3

In the same pan, slightly fry the spring onion, garlic and ginger. Then add soy sauce, brown sugar and lime juice and simmer until slightly sweet.

Step 4

Pour the little amount of sauce on the fish, scatter with chili, Thai basil or coriander and serve with lime wedges.
