You can make this fragrant and filling Thai salmon noodle dish very quickly. It is made with fresh ingredients, tastes great and will make your family members impressed craving for more.

Ingredients

  • 200 g egg/rice noodles
  • 1 teaspoon olive oil
  • 2-3 teaspoons Thai red curry paste
  • 2 spring onions (chopped)
  • 1 sweet potato (cubed)
  • 200 ml vegetable/chicken stock
  • 100 ml skimmed milk
  • 2 salmon fillets (cut into fine strips)
  • coriander (roughly chopped)

Method

Step 1

Cook the noodles, then rinse and drain.

Step 2

Fry the curry past for 1 minute in a preheated saucepan with oil in it.

Step 3

Add the spring onions (reserving 1 tbsp), the sweet potato, stock and milk. Bring quickly to the boil and simmer for 5 minutes until potato is cooked.

Step 4

Add the fish and cook for 2 more minutes, then add half the coriander.

Step 5

To serve, place the noodles on 4 plates with the fish and sauce on top. Sprinkle over the remaining coriander and onions.
