This warm and refreshing soup is a different, delicious way to serve salmon for your family and friends. It is cooked in just 20 minutes and all the people will love it!
- 2 tablespoons Thai red curry paste
- 165 ml coconut milk (light)
- 500 ml chicken stock
- 2 salmon fillets (skinless, 125 g each)
- 100 g egg noodles (dried)
- 1 tablespoon fish sauce
- 1 lime
- 2 spring onions (shredded)
- 1 red chili (shredded)
Preheat a large pan and cook the curry paste for a few minutes. Tip in the stock, add the coconut milk and bring to boil. Let it simmer for 5 minutes, then turn down to low heat.
Add the salmon and cook for 5 minutes until it is done.
Prepare the noodles according to the instructions, drain and divide between two soup bowls.
Top the noodles with salmon. Add fish sauce and lime juice to the soup and pour over the noodles. Sprinkle the spring onion, chili and coriander all over and serve.
