This chicken salad is low-fat but very flavorful as it is cooked with various Thai herbs and spices. This quick healthy recipe will be great as a delicious side dish or just a light yummy meal.
- 400 g minced chicken
- 100 ml chicken stock
- ginger (grated)
- 2 garlic cloves (finely chopped)
- 1 lemongrass (finely chopped)
- 2 red chili (finely chopped)
- 2 tablespoons fish sauce
- 3 tablespoons lime juice
- lettuce leaves
Cook the chicken stock in a pan until it turns white and the stock evaporates.
Tip in the ginger, garlic, lemongrass and chilies and cook for another 3 minutes.
Take off the heat and add the fish sauce and lime juice.
Stir in the herbs and serve with lettuce leaves and cucumber.
