The creamy, flavorful sweet potato soup is the perfect way to comfort your family and brighten up their cold winter days! It is very easy and fast to make and unbelievably good with all the seasonings in it.
- 1 tablespoon vegetable oil
- 1 onion (chopped)
- 1-2 teaspoon Thai curry paste
- 1 liter vegetable stock
- half sachet of creamed coconut
- coriander (roughly chopped)
- 750 g sweet potatoes (grated)
- Naan bread
Preheat the oil in a wok, then cook onions for 4-5 minutes until softened.
Add the curry paste and cook for another minute.
Stir in the grated sweet potato and stock, bring to the boil and let simmer for 5 minutes until potatoes are tender.
Take off the soup from the heat, add coconut and season. Cool down a little before blending until smooth.
Sprinkle with coriander and serve with warm naan bread.
