By following this recipe you can make a delicious Thai dinner in half an hour. This spicy Thai prawn noodles are low-fat yet full of flavor and truly Thai spices.
- 200 g Thai rice noodles
- 1 tablespoon sesame oil
- 2 eggs (beaten)
- 1 red chili (finely chopped)
- small knob of ginger (grated)
- 450 g Atlantic prawns (peeled, cooked)
- coriander (roughly chopped)
- mint (roughly chopped)
- lime, zest and juice
- peanuts (roasted)
- 1 tablespoon soy sauce
Prepare the noodles following the instructions on the pack, drain.
Preheat the oil in a large pan, pour in the beaten egg and make a thin omelet. Take out and slice into thin strips.
Fry the chili and ginger in the same pan for 1-2 minutes. Then add the noodles, prawns and egg. Add the soy sauce and fry for a minute, stirring continuously.
Tip in the chopped herbs and pour over the lime juice and zest. Scatter with chopped peanuts and serve.
