This warming and filling low-fat Thai prawn curry will be ready just in 20 minutes. Combining fresh-flavored ingredients and spices you get a yummy, delicious dish to impress your friends!
- 1 tablespoon vegetable oil
- 1 piece onion (chopped)
- 1 teaspoon ginger
- 1-2 teaspoons Thai red curry paste
- 400 g canned tomatoes (chopped)
- 50 g coconut cream sachet
- 400 g prawns (raw, frozen)
Heat a saucepan with oil in it. Tip in the onion and ginger. Cook for a few minutes until softened.
Add the curry paste and cook for 1 more minute.
Stir in the chopped tomatoes and coconut cream. Bring to the boil and let simmer for 5 minutes. Add a little boiling water if too thick.
Add the prawns and cook for 5-10 minutes more until they are good.
Serve with some plain rice and a little coriander sprinkled on top.
